I have collected and owned watches a longtime. The simple answer is (generally yes) if you buy the right watch at the right price it will gain in value over time. The expertise is in picking the right watch and then getting it retail. This of course is a hobby and not a replacement for stocks/bonds unless you are in a country where it makes sense to own some non traceable liquid items to avoid inheritance and wealth tax etc.
Personal Examples: I have bought around ten brand new SS Rolex Subs over maybe 30 years and always sold a few years later at a profit. Daytona's the same (but much harder to source retail). I bought an SS AP RO as a leaving present to myself in 2018 and just sold (in a bad market) and still doubled my money.
Many friends have made a killing doing this especially ones who travel a lot and have good relationships. A good friend says he makes more a year buying and selling a few watches as his retirement hobby than he ever did working, I have no reason to doubt him as he is able to source desirable PP and other brands in Switzerland at a jeweler he has a relationship with.
Like anything the key is to buy at retail and buy the right model and brand. I would recommend initially buying an older Speedmaster or Sub to get an idea and education into the subject. Good thing with many classic/collectable watches is the demand keeps growing and retail prices keep increasing so time is on your side.
